Smothered Quail

Ingredients:
  • 12 Quail
  • 12 tablespoons buttter
  • 3 tablespoons flour
  • 2-1/2 cups of chicken broth
  • 1/2 cup of sherry
  • Salt, to taste
  • Pepper to taste
  • Cooked rice


Directions:
Brown quail in butter, then transfer to a slow cooker. Stir flour into the skillet, mixing well. Slowly add the chicken broth, sherry, salt, and pepper. When well blended, pour over quail. Cover, and cook on high about 5 hours. Serve with rice.

Alternatively, you can bake the mix at 350 degrees, covered, for about an hour.

Makes 12 servings.
